SLOW FERMENTATION

Sourdough is naturally leavened bread. What does that mean? Instead of using commercial yeast you would find at the grocery store, sourdough bread is made using “starter” otherwise known as wild yeast. Starter is made up of 2 ingredients, flour and water, that naturally ferment and become a living, active yeast. All of my sourdough artisan loaves take anywhere from 24-36 hours to make, start to finish.

SIMPLE INGREDIENTS

Sourdough is the simplest and oldest way of making bread, dating back to biblical and Egyptian time.


It contains just 3 ingredients:
flour, water, and salt. This ancient method of baking is the base for all of my bread, focaccia, and pizza. And if you haven't tried my pizza yet, I highly recommend it as it's a top seller!

EASY TO DIGEST

The slow fermentation process of sourdough gives it many health benefits, including making the bread easier to digest. The wild yeast in sourdough helps break down the gluten, making the gluten level much lower than other types of bread. Although it is not gluten-free, it may be more tolerable for people with gluten sensitivities, as it's common for up to 95% of the gluten to be . Additionally the natural fermentation process lowers the bread’s glycemic index and helps your body absorb the good nutrients found in flour.

High quality and organic

My bread contains all organic flour, and I do my best to shop organic ingredients when possible. All of my bread and baked goods contain a portion of whole grain flour or freshly milled flour, which are both packed high in nutrients.

What is in my sourdough bread?

When you buy my bread i want you to buy with confidence knowing you are getting the best quality.

That's why i do my best to buy from local and small businesses whenever possible. My flour comes from Breadtopia, out of Fairfield IA, and Early Morning Harvest, in Panora, IA. I also shop most of my spices and smaller items from a local bulk food store, and my eggs are farm fresh!
